To this work, Poncelet discusses the apparatus and general principles of distillation and infusion. He provides recipes for perfumes, liquors and other beverages alongside the informative diagrams and descriptors explaining the merits of each creation. Illustrated, with six plates. Collated, complete. A new edition of this work. With an extensive glossary to the rear of the second volume informing the reader of ingredients and chemical terms. With the errata for both volumes to one leaf at the rear. Poncelet is also noted for his proposal of seven primitive tastes, acid, insipid, sweet, bitter, bittersweet, astringent and pungent. Poncelet assigns each of these tastes to a note on the musical scale. He explains his theory to this extensively.
