First edition. Scarce work. Dated from the British Library. Illustrated throughout with photographs and diagrams. Reviewing the manufacturing of chocolate, from cocoa bean selection to moulding, and confectionery, from sugar boiling apparatus to filling and polishing. Written by Auguste Jacoutot.

Condition

In the original brown cloth binding. Externally, with light shelf wear and rubbing to the extremities. Advertisement pasted to rear board has been removed leaving paper, foil and tide marks. Joints starting but firm. Internally, firmly bound. Pages are very bright and clean with age toning to endpapers and pastedown only.
