The first volume only of the three volume first edition.
This work was first published by la Chapelle in English, while the author was in Philip Dormer Stanhope, 4th Earl of Chesterfield's employment, before appearing in four volumes in French in 1735 as 'Le Cuisiner Moderne'.
La Chapelle's work was received as a reaction against the over-refined food that had dominated in the previous decades, by simplifying recipes and streamlining methods.
His recipes have been viewed as inspiring Hannah Glasse in her 'Art of Cookery Made Plain and Easy'.
Collated; illustrated with two folding tables, lacking one folding engraved plate.

An exceptionally scarce first edition of this important culinary work.
Condition
In a full calf binding. Significant rubbing to back strip heads and tails and boards. Lacking spine label. Joints starting, with rear board tenderly held, and front board loosely held by one cord only. Inscriptions to front pastedown and front free endpaper. Internally, firmly bound. Light worming to tail of page 275 to rear pastedown, not affecting the text. This worming also appears to the centre of each folding plate. Spotting to title page, with pages otherwise generally clean and bright.
